Choco-nana Sundae

Looking for a healthier ice cream option the whole family will love? Instagram mom and fitness/nutrition guru @fitmamarealfood has just the thing. With a few healthy ingredients, a food processor and some tasty toppings, life’s about to get cooler, creamier and sweeter than ever.

Here’s what you’ll need:

ICE CREAM INGREDIENTS:
• 4 bananas
• 2-4 tbsp. almond milk (or milk of choice)
• 2 tbsp. almond butter
• 2 tbsp. cocoa powder

SUNDAE TOPPINGS:
• Fresh diced strawberries (or favorite fruit)
• Sliced almonds and/or other nuts
• Shredded coconut

Makes 4 servings

STEP ONE
Let’s freeze some bananas! Peel bananas and dice them into 1- to 2-inch pieces. Arrange pieces on a parchment-paper-lined baking sheet and place in freezer. Allow 2-3 hours for the bananas to fully freeze.

STEP TWO
Place banana pieces in a food processor and pulse to break them down; then process continuously for about 30 seconds.

Add milk, almond butter and cocoa powder, then process for 30 seconds. Scrape the sides and break up any chunks that get stuck. Continue to process until you’re left with smooth, creamy ice cream. Use right away or place it in a loaf pan lined with parchment paper and freeze to make more solid.

STEP THREE
Now, it’s time to make the sundaes! Scoop the ice cream into bowls and put the fruit, nuts and shredded coconut in separate bowls. Let the family add their favorite toppings, and enjoy!
