Carrot Cake Whoopie Pies
We wanted something marvelously messy. We wanted something super scrumptious. And that’s exactly what we have with this Carrot Cake Whoopie Pies recipe from Instagram mom @meglynnmillerr. We’re confident these tasty little pies will fill the whole family with sweet, sweet joy.
You’re going to want to keep your Wet Ones close because these creamy, dreamy pies can be as messy as they are delicious. Here’s what you’ll need!
- 1 box carrot cake mix
- 2/3 cup water
- 1/3 cup vegetable oil
- 3 eggs
- 1 container of store-bought cream cheese frosting
- 1/2 block of softened cream cheese
- Piping bags
Line cookie sheets with parchment paper or silicone baking liners, or lightly spray with cooking spray.
In a large bowl, mix all the cake ingredients together to form a batter.
Fill an ice cream scoop halfway with cake batter, and transfer to the baking sheet. Repeat until all the batter is used, and bake for 10 to 12 minutes at 350°F.
While the cakes are baking, mix together your filling ingredients in a bowl to create the frosting.
Once the cakes are cool, pipe the frosting on both the top and the bottom.
Tip: If you don’t have piping bags, cut the corner off a plastic sandwich bag. Fill it with frosting and squeeze from the top down until the frosting comes out through the corner hole.
Remember to always have Wet Ones ready to help clean those frosting-covered fingers.
Smoosh the top and bottom together and VOILÀ, your whoopie pies are done and ready to be devoured.
